    These super simple Brownie Bites are stuffed with dark chocolate truffles for a sweet surprise your Valentine won't be able to resist!

    Hello, friends! We are just about a week away from Valentine's Day, so you know what that means. Bring on the chocolate and the PINK! As I'm sure you've realized by now, I love obnoxious, complicated dessert recipes probably more than the average person. But, being in school full-time {and also just being a human who is, you know, perennially tired}, I've come to definitely appreciate simpler recipes. Especially when they're for dessert! These adorable Dark Chocolate Truffle Brownie Bites are SO easy to whip up and super easy to customize. Hurray!

    So, these are basically exactly what they sound like. You make brownie bites. And you stuff em with a truffle. Ta-da! I used my favorite "homemade brownie mix" for these, but for an even speedier shortcut, you can use storebought mix. I won't tell 😉 I decided to use dark chocolate Lindt truffles because they're my faaaaavorite, but any will work! To be honest, I ran out of truffles and had to use Kisses for half the batch, and those turned out pretty fantastic too.

    So, how is life? And by life I mean PA school {clearly, since that is all I ever do}. Well, life has been busy busy busy! I've been back in class for just about a month and I literally have whiplash. We've already whizzed through another body system and had all our tests, so now onto the next! My fiance' is in his third year of medical school and the amount of work that I have to do is constantly blowing his mind. PA school ain't for sissies, that's all I gotta say about that. 😉

    But anyways, back to brownie bites! Easy to make. Even easier to eat. Make them for your special someone this Valentine's! Or make them for yourself and eat 4 in one sitting in a pre-test panic. I wouldn't know anything about that. But I also wouldn't judge. Happy baking!

    Serves: 24
    Ingredients
    • 24 truffles
    • ½ cup {1 stick} salted butter
    • 2 eggs
    • 1 teaspoon vanilla
    • 1 cup white sugar
    • ⅓ cup unsweetened cocoa powder
    • ½ cup all-purpose flour
    • ¼ teaspoon baking powder
    • to decorate: ¼ cup white chocolate chips, sprinkles
    Instructions
    1. First, place your truffles in the freezer. It's best if you do this at least 1 hr before baking so they have time to really get cold!
    2. Preheat oven to 350F. Spray a 24-cavity mini muffin pan with nonstick spray and set aside.
    3. In a medium bowl, whisk together the melted butter, eggs, and vanilla until smooth and creamy.
    4. Add in the sugar, flour, cocoa, and baking powder.
    5. Divide batter evenly among the 24 mini muffins, and bake for 15-20 minutes, until the top is dry and a toothpick inserted in the center comes out mostly clean.
    6. Remove brownies from oven, and push a frozen truffle in the middle of each one. Let brownies cool for about 30 minutes before removing from the pan, then let cool completely before decorating (the truffle will liquefy!)
    7. To decorate, place the ¼ cup white chocolate chips in a sandwich zip top baggie, and microwave in 15 second intervals until smooth and melted. Snip off a corner, and drizzle on to the brownie bites. Top with sprinkles, and enjoy!
