    You GUYS. The official countdown is on... nine days til Christmas. NINE. Considering I've only bought presents for two of the people on my list, I think we can let the meltdown commence. Instead of shopping today, I made cookies. Obvious course of action, no?

    Every year around, well, now, I look on my blog and go "Hmm, what Christmas goodies have I made in the past?" The sad answer is, not many at allllll. So this year I'm trying extra hard to make up for it and crank out lots of holiday treats! This year, after a Cranberry-Orange Bundt Cake and Dark Chocolate Mint Chip Biscotti, I present to you Fudgy Christmas Chip Cookies! These little fluffy bites are intensely chocolatey and gooey, and made perfectly festive by red and green chocolate chips.

    I love these because they are fast and easy, one-bowl, and perfectly baked in just 10 minutes. If you're looking for a crowd-pleasing cookie recipe that's a snap to make, this is it! And this dough is super versatile... the original recipe is from my Dark Chocolate Toffee Cookies! So you can mix it or top it with whatever you want and I'm sure they will still be so delicious. Think of the possibilities... peppermint candies, peanut butter chips, candy cane Kisses, marshmallow fluff.... the variations are endless!

    Fudgy Christmas Chip Cookies

    Ingredients

    • 1 cup {2 sticks} unsalted butter softened
    • 1 ½ cups white granulated sugar
    • 2 eggs
    • 2 teaspoon vanilla extract
    • ⅔ cup dark cocoa powder
    • 2 cups unbleached all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 ½ cups Nestle Holiday Chips

    Instructions

    • Preheat the oven to 350F and line two baking sheets with parchment or silicone liners.
    • In the bowl of a stand mixer, beat together the butter and sugar until smooth and fluffy.
    • Add in the eggs, one at a time, followed by the vanilla extract. Add in the cocoa powder, baking powder, and salt, and mix well. Add the flour, and mix until just incorporated. Pour in the holiday chips, and fold in with a spatula.
    • Scoop out spoonfuls of dough onto the prepared baking sheets, evenly placing 12 per sheet.
    • Bake in preheated oven for 10-12 minutes. Cookies will seem too soft but will firm as they cool. Let cool slightly and enjoy!
