    Happy Sunday! Today, I am introducing you to my newest sponsor, Sunwarrior Protein! This brand is vegan and all-natural, and their products are free of gluten, soy, dairy, and allergens.     These waffles are easy-peasy to whip up, and they taste amazing! All you need is the basic flour and sugar, along with cocoa, Sunwarrior chocolate protein, coconut milk, and coconut oil. You just mix it all up, pour it in your waffle iron, and you are just a few minutes away from a delicious treat! I'm sure you could also use this batter to make pancakes, but I haven't personally tested that. If you do, let me know how that works out for you! I'm curious!

Everything is delicious, and so good for you. You just can't make a bad purchase. If you're looking to buy protein powder, they have several great choices, all of which are totally vegan and healthy! You can go the traditional route with Classic Protein, which is rice protein based; you can boost your protein content with the Warrior Blend, made with pea, cranberry, and hemp proteins; or you can try their newest blend, the Classic Plus, which combines proteins from rice, chia, peas, quinoa, and amaranth.     Ingredients

    • 2 scoops Sunwarrior chocolate protein powder
    • 1 ¾ cups all-purpose flour
    • ¼ cup cocoa powder
    • 1 14 oz can lite coconut milk
    • 1 tablespoon white vinegar
    • ¼ cup melted coconut oil
    • ½ granulated sugar
    • 1 ½ teaspoon baking powder
    • salt

    Instructions

    • Preheat the waffle iron.
    • In a large bowl, whisk together the flour, cocoa, protein powder, sugar, baking powder, and salt.
    • Pour in the coconut milk, vinegar, and melted coconut oil, and mix vigorously to combine.
    • When waffle iron is ready, spray generously with nonstick spray and cook waffles.
    • Serve with berries and maple syrup!

      Has anyone tried this gluten free? I can use a gf all purpose flour. Thoughts on the white vinegar? Maybe apple cider vinegar?

        Hi Velma! I have not tried it with the GF flour so I'm not sure about the results. As for the white vinegar, I use it to turn the almond milk into a "buttermilk" substitute. I suspect ACV would not be acidic enough but I think you could use lemon juice instead!
