    Today, my friends, I am here to blow your mind. No-churn ice cream has been pretty popular this year, and I actually made this Peanut Butter Pie version a few weeks ago with creamy peanut butter swirls and crushed Oreos {one word: YUM}. I had been brainstorming another flavor of homemade ice cream, and I thought about cake batter ice cream... I'm a fiend for anything confetti cake/birthday cake/cake batter flavored, so it seemed like an obvious choice. "BUT," I thought, "what about chocolate?!" So, this is the frankestein of an ice cream that I came up with. Cake batter ice cream with rich, chocolatey chunks of fudgy brownie and tons of sprinkles {obvi}. I call this, Birthday Party Ice Cream. You're welcome.

    Homemade, no-churn ice cream is so easy that it's almost too easy. Like, the knowledge that I could literally make homemade ice cream every single day if my heart desired is definitely dangerous. I do adore this though, because the flavor possibilities are seriously endless! My fiance' {I've been engaged for almost two weeks and it still feels funny to call him that} is not a dessert person, like, at all. He enjoys my truffle tart and I made him homemade almond snickers once, but generally, he doesn't really dig sweets. Except for ice cream. I've always mourned the fact that of COURSE he liked ice cream, the one thing I could probably never make without an expensive, bulky, annoying appliance. 2-ingredient no-churn ice cream has definitely changed the game.

    All you need is a pint of heavy cream, a can of sweetened condensed milk, and basically any mix-ins your heart desires. My beloved's all-time favorite ice cream is Blue Bell's Moolenium Crunch, which is vanilla based with tons of mix-ins, including caramel chips, chocolate, pecans, almonds, and walnuts. It's basically the best thing ever, and I'm prooobaably gonna recreate that as my next no-churn flavor! Meanwhile, this flavor is pretty mindblowing. If you love cake batter things and chocolate things, this will become your new favorite! Let's put it this way, almost an entire 9x9 pan of brownies goes into it. Have I convinced you yet? 😉

    Ingredients

    • 1 pint heavy whipping cream
    • 1 14 oz can sweetened condensed milk
    • ½ cup vanilla cake mix
    • 1 snack-sized pouch brownie mix cooked to package directions
    • ½ cup sprinkles

    Instructions

    • First, bake your brownies according to package directions. Near the boxes of brownie mix, you should be able to find smaller pouches that are marketed as "snack size" and make a 9x9 pan. This is what you want! Bake them up, and let them cool completely.
    • In the bowl of a stand mixer fitted with a whisk attachment, whip the heavy cream until it holds stiff peaks. Slowly drizzle in the sweetened condensed milk until it's completely incorporated.
    • Once the mixture is thick and fluffy, add in the cake mix and sprinkles.
    • Grab a 9x5 loaf pan {or other suitable ice cream container}, and pour in half of the ice cream mixture. Top with small pieces of the brownie, then add in the remaining ice cream, and repeat.
    • Cover tightly with plastic wrap, and freeze for at least 6 hours. Enjoy!
