    princess castle birthday cake | The Baking Fairy

    Hello, friends! Today, I am sharing one of the little {well, so-to-speak} side projects for a customer. A Disney princess birthday cake! I think we all know by now I'm pretty well-versed in princess cakes, having made a Belle cake, Cinderella cake, and Elsa cake. This however, was my first time making a princess castle! And my first time making a square cake covered in buttercream, as silly as that sounds. I've got two words for you... it. sucks. I don't know how other people get pretty, perfect corners but I'll tell you it's near impossible! But, I digress. Let me show you around this castle. 😉

    While I've made cakes with non-edible props before {like Barbies and plastic flowers and all sorts of stuff}, I have never made cakes with plastic pieces before! My customer just got her cake kit from Amazon, and it was definitely a different experience, but I thought it was really helpful! It was nice having a picture to come back to for inspiration 🙂

    This cake is made of four 9x13 cakes, with the bottom being two whole cakes, and the top being the other two cakes cut in half {though I only ended up using 3 out of the 4 resulting pieces}. I made confetti cake filled with, what else, pink buttercream 🙂 I used my trusty American buttercream recipe made with butter and powdered sugar, and achieved the perfect "princess pink" using one drop of AmeriColors Fuschia and one drop of Electric Pink. The whole cake is covered with the pink buttercream, with the "bricks" and letters made of fondant, and the flowers piped in royal icing. The letters were cut using these alphabet cutters from Hobby Lobby.

    My order also included a dozen strawberry cupcakes topped with pink and white frosting, more royal icing flowers, and some pretty pink princess rings! This order was absolutely adorable and so much fun. I love helping make little girls' birthdays as special as possible, and I'm sure Princess Raeleigh will love her very own {edible} princess castle. Happy Birthday, Raeleigh!
