    Oh, you guys, I'm so excited to be sharing this soup recipe with y'all today! I know I say this like every time I make a recipe, but this might be my new favorite! Chicken mushroom soup with lots of tasty vegetables and a handful of orzo pasta thrown in for good measure. It's kinda like chicken noodle soup, but with the addition of mushrooms, and tiny pasta instead of big egg noodles. But it doesn't matter because honestly it's so stinkin good. The weather has been, in typical Texas fashion, all over the place. Hot one day, cold the next, hot again... my body just doesn't even know how to handle it. This rich and hearty soup is perfect for giving your body an immune boost and sneaking in healthy bone broth and veggies at the same time. Let's get cooking!

    This tasty little soup starts the same way as most of my others... with a soffritto of carrots, onions, and celery, plus a bit of garlic, all sauteed in some olive oil. I then added the mushrooms and some chicken drumsticks and let them get a nice sear, then added in chicken broth and all the seasonings, and let it simmer until everything was nice and soft and cooked through. I plucked the chicken out of the pot, cleaned it off the bone, and threw it back in, then added a bit of extra water and the orzo pasta, and let it cook until perfectly al dente. And.. ta-da! Chicken mushroom orzo soup is served. Seriously easy and it packs so much flavor!

    A few years ago, I went through an anti-mushroom phase, and you honestly couldn't have paid me to eat one. I don't know why, but I just found them so totally gross and couldn't stomach the thought of eating them. I find it hilarious because now I could honestly put mushrooms in all-of-the-things and be perfectly happy. These creamy mushroom pockets are pretty much to-die-for, as are these cheesy voodoo mushroom burgers. And this rib eye roast with mushroom gravy. Like seriously, give me all the mushrooms and nobody gets hurt. This soup is the perfect addition to my mushroom recipe collection. Try this little twist on classic chicken noodle soup and let me know what you think!

    chicken mushroom orzo soup

    Ingredients

    • 3 carrots diced
    • ½ white onion diced
    • 3 ribs of celery diced
    • 3 cloves of garlic minced
    • 1 tablespoon olive oil
    • 4 chicken drumsticks
    • 2 cups sliced mushrooms
    • ¼ cup dry mushrooms {optional but they add great flavor!}
    • ¼ cup fresh parsley or ½ teaspoon dried parsley
    • 1-2 sprigs fresh rosemary or ½ teaspoon dried rosemary
    • 1 bay leaf
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 4 cups chicken broth
    • salt and pepper to taste
    • ½ box orzo pasta or other small pasta

    Instructions

    • Pour the olive oil in a large soup pot turned to medium-high heat, and add in the onion, garlic, carrots, celery, and mushrooms. Cook, stirring occasionally, until vegetables are fragrant and slightly soft, 4-5 minutes.
    • Add in the chicken drumsticks and let them cook for a little bit.
    • Once the chicken has a nice sear, add the chicken broth, dry mushrooms, and all of the herbs and spices. Turn heat onto low, and let the soup simmer for at least 1 hour, until it has thickened and all vegetables are very soft.
    • After about 30 minutes, pull the chicken drumsticks out of the soup, clean all the meat off the bones, and add it back in.
    • When almost ready to serve, add in the pasta, along with about 1-2 cups extra water, and turn the heat on high.
    • Let the soup boil for 7-8 minutes, pasta is cooked through. Taste and add salt and pepper as needed, and serve immediately!

      Orzo is definitely my favorite pasta to put in soup! I just love the texture. A big bowl of this soup sounds super delicious on this cold, cloudy day we are having here!

      I WOULD LIKE TO MAKE YOUR CREAMY TORTELLINI AND SAUSAGE SOUP BUT I'M WONDERING IF YOU MEANT 9 OZ. OF THE FROZEN TORTELLINI. NINETEEN SOUNDS LIKE WAY TOO MUCH.
