    Ohhh, you guys are gonna absolutely love the recipe I have for you today! This California Club Sandwich is a copycat version of a sandwich I had recently, and I seriously adored it so much I had to recreate it at home asap. This is seriously the perfect lunch, as it combines all of my favorite sandwich fixings into a freaking croissant. Swoooon. Hit me with that butter, baby. Is this a light, diet lunch? Well, no. Is it delicious and worth every single calorie? Oh, yeah. Without a doubt.

    So I'm sure you're wondering just what is exactly hiding within this buttery croissant that has me singing its praises. Well, I'm glad you asked! You start with a base of smashed avocado sprinkled with garlic salt {because all good things start with avocado and/or garlic. it's true}, topped with bright & peppery arugula, thinly sliced smoked turkey, crispy bacon, and of course cheese. Seriously all of my favorite things stuffed between two slices!

    Okay so, to its defense, the humble little California Club isn't that bad for you. It has healthy fats from the avocado, lean protein from the turkey and bacon, and some vitamins from the arugula. I mean, yeah, you are putting it all in a butter croissant, but I'm sure it would taste almost as good between two slices of whole wheat bread. It's up to you! πŸ˜‰ I think all these flavors work so well together to deliver a sandwich that is tasty and super satisfying without leaving you feeling bloated or over-full. I love everything in it, but of course feel free to leave things out or substitute according to your personal tastes. I liked the mellow, slightly smokey provolone in this, but for something with a little more bite, I think swiss or sharp white cheddar would be amazing! This is really the ultimate "guilty pleasure but no so bad for you" lunch no matter what you decide to put in it. Happy eating! πŸ™‚

    Serves: 2
    Ingredients
    • 2 croissants
    • 4 bacon slices
    • 1 ripe avocado
    • ¼ teaspoon garlic salt
    • ½ cup arugula
    • ¼ lb thinly sliced smoked turkey
    • 2 slices provolone cheese
    Instructions
    1. First, cook the bacon to your personal preference.
    2. Slice the croissants in half, and toast lightly {I just set them on top of my toaster on the low setting until the outside crisps up!}.
    3. Split the avocado in half, and mash one half in each croissant, topping with the garlic salt and the arugula.
    4. Lay the turkey slices on top, followed by the bacon and the cheese.
    5. Serve immediately!
