    Hi friends and happy Monday! I am so excited to kick off another themed week today... #AppleWeek! As I'm sure you can guess, a bunch of fellow bloggers and I will be sharing APPLE recipes all week long in partnership with some fabulous sponsors. I am starting the event off with this scrumptious Vegan Caramel Apple Galette, packed full of fresh juicy apple slices and topped with a creamy, decadent vegan caramel. It is absolutely delicious!!

    Today's apple galette recipe is sponsored by Imperial Sugar! As a baker, I go through TONS of sugar especially during the fall and holiday season! Imperial has tons of high quality sugar products, from your classic white granulated sugar to light and dark brown sugars to powdered sugar. The best part is that their sugar is totally VEGAN! I know, how could sugar not be vegan? Many brands actually filter and lighten their sugar with animal bone char (ew) which is understandably not vegan.... but thankfully, Imperial Sugar does NOT process their sugar this way which gets two big thumbs up from me!

    Here is the recipe for my vegan caramel apple galette! I've made it super simple by using store-bought pie crust so it really comes together in a pinch. The caramel recipe makes plenty so that you can use leftovers over ice cream {or to decorate cakes... but that is coming tomorrow!} 😉 Happy baking!     vegan caramel apple galette #AppleWeek

    This Vegan Caramel Apple Galette is packed full of fresh apples and topped with a decadent dairy-free caramel sauce!

    Ingredients

    • 1 frozen pie crust {most brands are actually vegan just double check the ingredients!}
    • 2 medium apples cored and sliced thinly {I used Envy apples}
    • ½ cup Imperial Sugar dark brown sugar
    • 2 tablespoon all-purpose flour
    • 1-2 tablespoon apple pie spice
    • 2 teaspoon vanilla extract
    • juice of 1 lemon
    • *for the caramel*
    • ½ cup Imperial Sugar dark brown sugar
    • ¼ cup soy milk {you could also use full-fat coconut milk}
    • 2 tablespoon vegan butter
    • 1 teaspoon vanilla extract
    • pinch of salt
    • for finishing: additional soy/coconut milk and Imperial granulated sugar for the crust

    Instructions

    • First, prepare the caramel sauce. In a medium nonstick pot, combine the brown sugar and soy or coconut milk.
    • Turn heat on medium, and cook the caramel, stirring often, until thick and dark amber. This will take 10-15 minutes. Be careful not to burn it!
    • When ready, remove from heat and add in the vegan butter, vanilla, and pinch of salt. Set aside while you prepare the rest.
    • Preheat oven to 425F. Grab your thawed pie crust, and carefully roll it out to a rough circle about 12" across. Place on a piece of parchment or silicone liner on a baking sheet.
    • To prepare the apples, wash and slice them thinly. Place in a large bowl and toss with the additional brown sugar, flour, apple pie spice, vanilla, and lemon juice.
    • Mix until combined, then pour into the middle of your prepared crust.
    • Gently fold over the sides of the galette around the apple filling. To finish, brush the crust with some additional soy/coconut milk and sprinkle it with the white granulated sugar.
    • Bake galette for 35-40 minutes, until golden brown and crisp.
    • Serve topped with the vegan caramel sauce and ice cream!

      Who knew not all sugar was vegan? I'll try not to ponder on that too long! On to tastier things, like galettes. This one is a beauty!
