    Get a head start on Halloween baking with these adorable Fuzzy Monster Donuts! Pumpkin chocolate chip donuts are decorated with bright frosting and candy eyes for a fun treat.

    Hi guys and happy Monday! I know early October seems a little premature for Halloween recipes, but I promise it'll be here before you know it. Well that, AND, this kicks off another themed week! This is #HalloweenTreatsWeek, where I am again pairing up with a bunch of fabulous bloggers and sponsors to share recipes and PRIZES! YESSSS. These adorable Fuzzy Monster Donuts are just the thing to get us off to a good start!

    The set up for this week is a little different than it was for #AppleWeek, as there are no requirements for exclusive sponsor posts... so most things use several different brands in one recipe! Today, however, we are all about Wilton! As an amateur cake decorator, Wilton has been my go-to brand for years for all things cake & cupcake. They sent me these fabulous candy eyeballs to use {because no Halloween dessert is complete without eyes} but there are also some other treats that will make an appearance later this week 🙂 I also used their grass tip (#233) to make the fuzzy monster effect on these donuts!

    Another sponsor for #HalloweenTreatsWeek is actually cross-over from last week - Imperial Sugar/Dixie Crystals! Any baking requires sugar so... may as well use the best 😉 The other sponsor I am using today is Adam's Best! They have a fabulous CLEAR vanilla extract that works great for colored foods so that your shade isn't changed by the brown vanilla. They also sent some red & green food coloring which will be making an appearance later this week as well. I have so many goodies in store for y'all!

    Get a head start on Halloween baking with these adorable Fuzzy Monster Donuts! Pumpkin chocolate chip donuts are decorated with bright frosting and candy eyes for a fun treat.

    Serves: 18
    Ingredients
    • 1½ cups (1 15oz can) canned pumpkin puree
    • 1½ cups white sugar
    • ¾ cup vegetable oil
    • 2 eggs
    • 3 cups unbleached all-purpose flour
    • 3 teaspoon baking powder
    • 2 teaspoon pumpkin spice
    • ¾ teaspoon salt
    • 1½ teaspoon baking soda
    • 2 tablespoon vanilla extract
    • 1½ cup semisweet chocolate chips
    • *to decorate*
    • 2 sticks unsalted butter, softened
    • 4 cups powdered sugar
    • 2-3 tablespoon milk
    • 1 teaspoon Adam's Best ClearVan colorless vanilla extract
    • pinch of salt
    • food coloring as desired
    • Wilton candy eyeballs
    Instructions
    1. Preheat oven to 350F. Spray a donut pan with baking spray and set aside.
    2. In a medium bowl, combine the pumpkin, sugar, oil, vanilla, and egg, mixing till well-blended.
    3. Add in together the flour, baking powder, baking soda, salt, and cinnamon, mixing until evenly combined. The dough will be a little runny!
    4. Stir in the chocolate chips, then pour the batter into a piping bag or zip-top bag and cut the corner.
    5. Pipe the batter into the prepared donut pan.
    6. Bake in your preheated oven for about 12-14 minutes, until lightly golden and springy. Let cool in the pan for a few minutes, then transfer to a wire rack to finish cooling completely.
    7. While the donuts cool, prepare the frosting. In the bowl of a stand mixer fitted with the whisk attachment, beat the butter until smooth and creamy. Add in the powdered sugar, a cup at a time, until fully incorporated.
    8. Mix in Adam's Best vanilla and pinch of salt, and add some milk as needed if the frosting is too thick.
    9. Divide the frosting in different bowls if desired, and color each a different color.
    10. To decorate, fit a piping bag with the Wilton grass tip. Pipe frosting all over the donuts, and finish with some Wilton candy eyes. Enjoy!
