    I think it's so funny that I'm always making all sorts of fancy, sugary, ridiculous deliciousness for the blog when in actuality, my day-to-day diet is pretty boring. I share sweet rolls and waffles drenched in chocolate and {essentially} pan-fried banana bread, but really my normal breakfast consists of a cup of coffee and like, a bowl of cereal with almond milk. #livingthelife. Lately, I've been on a bit of an oatmeal kick, which is why I wanted to share this incredibly quick and easy Peanut Butter & Jelly Oatmeal!

    Normally, I like to put fresh fruit and some sort of nut butter in my oatmeal, but sometimes I also throw in some honey or some protein powder. I've found you can put almost anything in oatmeal and have it taste pretty good. On mornings when I'm either in a big hurry or I have literally nothing salvageable left in the fridge, I make peanut butter & jelly oatmeal. Because who doesn't have some PB and jam in the house like, at all times? I've reinvented the classic combo as thumbprint cookies and as banana bread, but I think I have to admit the oatmeal version is my favorite 😉 It honestly takes like... 5 minutes to prepare, it's so good, and it keeps you full forever!

    For the sake of time, and saving dishes {and also cause I'm lazy}, I usually make my oatmeal in the microwave, but if you're used to making yours on the stovetop, you can absolutely adapt it to be cooked that way! I've tried both, and honestly I haven't really found a difference in flavor or texture. But oatmeal on the stove takes longer and requires constant stirring and babysitting, so I think I'll stick with my trusty microwave 😉 Try this out and let me know what y'all think! I usually go with the classic smooth peanut butter and my favorite 4-berry jam, but I'm sure any combo would be delicious.

    Ingredients

    • ½ cup old-fashioned oats
    • 1 cup water
    • 1 tablespoon creamy peanut butter
    • 1 tablespoon berry jam
    • 2 tablespoon cream or dairy/nondairy milk

    Instructions

    • In a small bowl, combine the oats and water, and microwave on high for 2 minutes, until all the water has been absorbed and the oats are creamy.
    • Stir in the cream or milk, followed by the peanut butter and jam. If you like your oats a bit more sweet, you can also add a bit of sugar or honey to taste.
    • Enjoy immediately!

      LOL, I'm totally the same way! I make treats, but send them to work with the hubs. And then eat boring cereal. I go through oatmeal phases, so next time I get in one I will definitely have to try this! I love how PB just gets all melty and delish on a hot bowl of oats!
