    Hi friends and happy Saturday! So, I have some good news and bad news for y'all. The good news - I'm going on vacation today! Laptop-less, minimal internet vacation. Which leads us to the bad news - my lil blog of mine will be a bit quiet over the next week as I won't be here to post. But! I will have some social media access so if you want to be nosey, come follow my cruise adventures on Instagram and the like ? And now... what do we have here?! These are Cara Cara Orange Poppyseed Muffins and they are absolutely delicious! Soft, tender, and with the best little punch of citrus. These would be perfect as part of your Easter brunch!

    I always like honing you guys in to my recipe creating process, so how did these cara cara orange poppyseed muffins come to be? Well, I've been on a muffin kick lately {trust me, you'll see} which is weird because I'm not usually a muffin person. Then I thought about the container of poppyseeds which I've had for eons and figured I should use it. Lemon poppyseed is too predictable. Blood orange and poppyseed would be fun except its not blood orange season! CRY. My family is so not into grapefruit. So... cara cara oranges to the rescue! These babies are honestly my favorite kind of citrus. Sweet, zesty, and they have the prettiest pinkish color. A food blogger's dream, essentially.

    In other very exciting news... we FINALLY booked our wedding venue! Wheee. This means I can finally start planning things {and sharing them on here} because clearly I am nothing if not an over-sharer. I'll just keep you guys updated on things as they happen! But so back to these orange poppyseed muffins - SO YUM. My family is seriously obsessed with these which I totally wasn't expecting. There's no chocolate in here! Like, who are you people?! But the combination of super soft, tender muffins packed with fresh orange flavor is just too much to resist. The secret ingredient here is full-fat ricotta to make these extra moist and yummy!

    I hope you guys will give these Cara Cara Orange Poppyseed Muffins a try soon! They're delicious and so easy to make. Perfect for brunch, snack time, or just because! If you're in a pinch... I promise normal Navel oranges work just as well. But if you find Cara Cara oranges, they're worth a try! 🙂

    Ingredients
    • 1 cup granulated sugar
    • 1 egg
    • 4 tablespoon unsalted butter, melted and cooled
    • 1 cup full-fat ricotta cheese
    • ½ cup cara cara orange juice
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 2 tablespoon poppy seeds
    • 1 teaspoon vanilla extract
    • zest of 1 orange
    Instructions
    1. Preheat oven to 400F, and line a muffin pan with 12 liners.
    2. In the bowl of a stand mixer fitted with the whisk attachment, beat together the ricotta and sugar until light and fluffy.
    3. Slowly pour in the melted butter, then beat in the egg and cara cara orange juice.
    4. In a separate bowl, mix together the flour, baking powder, poppy seeds, and salt.
    5. Slowly add the dry ingredients into the wet, and finally add in the orange zest and vanilla extract. Divide batter evenly between the 12 liners. Batter will be thick! Top each muffin with a small piece of orange, if desired.
    6. Bake at 400F for 25-30 minutes, until a toothpick inserted in the center comes out with just a few crumbs.
