    Hello friends and happy Sunday!! I don't usually post on the weekends, but this ER schedule has me all upside down and backwards. I don't even know what day of the week it is most of the time ? If you're looking for something tasty for your Sunday brunch, or just something to have on hand for breakfast this week... these Strawberry Dark Chocolate Chunk Muffins fit the bill! They're so simple to make, and packed with fresh berry pieces and big melty chunks of chocolate. So yummy!

    I am super sad to tell y'all that my ER rotation is already almost done! I just have two more {overnight} shifts and that is IT. I have loved this month so much! Honestly this rotation has me reconsidering all of my future career decisions ? Good news though, my next rotation is my ELECTIVE and it's pediatric hospitalist which should be super fun! It's something I specifically requested so I'm really looking forward to it! Give me allll the bebessss.

    Anyways - back to muffins! Ever since I was little, chocolate chunk muffins have been my absolute favorite. I'm sure I'm not alone in that! It's hard to mess with perfection, but the little fresh punch of strawberry is so wonderful in here. I promise it makes these muffins even better!! Think of them like chocolate-covered strawberries in a form that's acceptable for breakfast.

    Ingredients
    • 1 cup + 2 tablespoon all-purpose flour
    • 1 teaspoon baking powder
    • ¼ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup white sugar
    • 3 tablespoon unsalted butter, softened
    • 2 tablespoon vegetable oil
    • 1 eggs
    • ½ cup sour cream
    • 1 teaspoon vanilla extract
    • ½ cup chopped strawberries
    • 1 cup chocolate chunks
    Instructions
    1. Preheat the oven to 350F, and line a muffin pan with liners.
    2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    3. In the bowl of a stand mixer, beat together the butter, oil, and sugar until light and fluffy.
    4. Add in the egg, beating until combined.
    5. Add in the sour cream and vanilla, followed by the flour mixture. Mix until just combined, and don't over-beat! Finally, gently fold in the strawberry pieces and chocolate chunks
    6. Divide the batter among the prepared muffin liners, and top each muffin with a couple more pieces of chocolate.
    7. Bake for 25-30 minutes, until muffins are golden brown and puffy, and a toothpick inserted in the center comes out clean.
