    Hi friends and happy Monday! I have seriously been slacking in the pumpkin department this year, but good news! I have a few yummy recipes showcasing everyone's favorite gourd planned for the blog, starting with this Easy Pumpkin Cobbler with Brown Butter Streusel. So, confession time - I originally made this recipe back in 2013, but this cobbler is so good that some updated pretty pictures were definitely overdue. She's all ready for her close-up now 🙂

    So I know pumpkin cobbler sounds like a bit of an interesting concept, but I really don't know what else to call this! Crustless pumpkin pie? Pumpkin custard? ? Call it what you want, all I know is that it's gooood. Sweet, spiced pumpkin filling is topped with a toasty brown butter streusel made with oats, brown sugar, and pecans. It's so comforting and perfect topped with vanilla ice cream or freshly whipped cream! If you're craving that pumpkin pie flavor but don't want to put in the work, this easy pumpkin cobbler totally hits the spot.

    So let's talk real life. I am losing my mind!!! I take my PANCE (PA boards) in just about 3 weeks and it is stressing me out. There's so much to juggle right now, between finishing up my last rotation at the urgent care, doing as many practice questions as I can cram in a day, running the blog and all the social media accounts, and creating/photographing new content. Oh, and planning a wedding at the same time. And I guess I should eat at some point and work out, too. I am trying my best but if you see me slacking a little bit on this front, that's why. Just eat this pumpkin cobbler and pray for me ?

    Serves: one 9" dish
    Ingredients
    • *for the filling*
    • 1 can pure pumpkin puree
    • ¾ cup whole milk
    • ¾ cup heavy cream
    • ¼ cup granulated white sugar
    • ½ cup dark brown sugar
    • 2 eggs
    • 1 teaspoon pumpkin pie spice
    • ½ teaspoon salt
    • *for the streusel topping*
    • ¼ cup {½ stick} unsalted butter
    • ¼ cup brown sugar
    • ½ cup all-purpose flour
    • ½ cup old-fashioned oats
    • 1 teaspoon pumpkin pie spice
    Instructions
    1. Preheat the oven to 400F; spray an 8-9 inch pie dish with nonstick spray, and set aside.
    2. In a large bowl, whisk together the pumpkin, milk, heavy cream, and eggs until well-incorporated.
    3. Add in the sugars, pumpkin spice, and eggs, and whisk vigorously. Pour into the pie dish and set aside for now.
    4. Now, let's make the brown butter. In a small nonstick pot, heat the butter over medium-high heat until completely melted.
    5. Turn the heat down to medium-low and start whisking as the butter bubbles and fizzes. As soon as it turns medium to dark golden and starts to smell nutty, take it off the heat! You don’t want it to burn!
    6. Whisk in the brown sugar and pumpkin spice, then add in the flour and oats. Mixture should be clumpy!
    7. Sprinkle the streusel atop of the pumpkin mixture, and set in the oven.
    8. Bake uncovered for 35 minutes at 400F, then cover and raise the heat to 450F for the last 10-15 minutes. Cobbler should be firm around the edges and just a tiny bit jiggly in the center {it will firm as it cools}. Enjoy warm or at room temperature with whipped cream!
