    These Vegan Birthday Cake Oreo Cupcakes are sure to put you in a celebrating mood! Rich chocolate cupcakes are topped with "birthday cake" frosting and hide a surprise in the bottom... a whole Oreo cookie!

    Hi friends and happy Thursday! Today is a very special day indeed... it's National Cupcake Lovers Day! You guys know I love any excuse for a fun themed treat, and I actually organized a food blogger event today to celebrate the occasion! I have paired up with 35 other ridiculously talented bakers to bring you some delicious & unique cupcake ideas. My creation is these Vegan Birthday Cake Oreo Cupcakes, but be sure to check out everyone's recipes. I am so excited this day has finally arrived!

    As I have talked about many times before, one of my all time faaaaavorite "accidentally" vegan foods are Oreos! And I have no shortage of plant-based Oreo recipes on here, between these Oreo stuffed vegan chocolate chip cookies, vegan cookies & cream tres leches, and this vegan cookies & cream layer cake. Obviously there was something missing to my collection... cupcakes! When one of my BFF's had a birthday coming up a couple of weeks ago, it was just the perfect occasion. Oreo cupcakes, here we come! Except, the fun flavors of Oreo are also vegan-approved, so instead of the originals, I decided to make these with the birthday cake Oreos instead. OMG. Actual heaven!

    The base for these cupcakes is my beloved vegan chocolate cake recipe, but these babies have a little secret in the bottom {a whole Oreo cookie!} plus tons of chunks of crushed Oreos mixed in the batter. The frosting has both vanilla & almond extract for a little bit more "birthday cake" flavor, and I just couldn't resist... I mixed rainbow sprinkles right in the frosting, too! The topping could only be MORE Oreos and MORE sprinkles, of course! I think this says "HAPPY BIRTHDAY" all over, don't you?!

    Serves: 18
    Ingredients
    • *for the cupcakes*
    • 1¼ cups all-purpose flour
    • 1 cup white granulated sugar
    • ½ cup cocoa powder
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup unsweetened vanilla almond milk
    • ⅓ cup vegetable oil
    • 2 tablespoon white vinegar
    • 1 tablespoon vanilla extract
    • 18 whole Birthday Cake Oreo Cookies
    • crushed Oreo cookies to add to batter
    • *for the frosting*
    • ½ cup shortening
    • ¼ cup vegan butter
    • 3 cups powdered sugar
    • 2 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • pinch of salt
    • ¼ cup rainbow sprinkles
    • 2-3 tablespoon of nondairy milk if needed, to thin frosting
    • *for topping: Oreo halves and rainbow sprinkles
    Instructions
    1. Preheat the oven to 350F. Line a cupcake pan with 18 liners, and place an Oreo cookie in the bottom of each. Set aside.
    2. In a large bowl, whisk together the flour, cocoa, sugar, salt, baking powder, and baking soda.
    3. Add in the almond milk and oil, and mix vigorously. Add in the vinegar and vanilla, and mix until well combined. Finally, stir in the crushed Oreo pieces.
    4. Divide batter evenly among the prepared liners, filling each cup about ⅔ of the way.
    5. Bake for 18-20 minutes, until a toothpick inserted in the center comes out with just a few crumbs.
    6. While the cupcakes cool, make the frosting.
    7. In the bowl of a stand mixer, beat the shortening, vegan butter, vanilla extract and almond extract together until completely smooth and creamy. Add in the powdered sugar, 1 cup at a time, until a thick frosting forms. If frosting appears too thick or lumpy, add a few spoonfuls of nondairy milk until it smooths back out. Finally, stir in the rainbow sprinkles.
    8. To decorate, I used an open-star tip and piped swirls on each cupcake. Top with half an Oreo, and more rainbow sprinkles. Enjoy!
