Happy happy Wednesday, friends! I am so pumped to be sharing these amaaaazing Chai Tea Latte Bundt Cakes with Vanilla Glaze today! Personal-sized, soft and fluffy bundt cakes are spiced with real chai tea leaves and topped with a sweet glaze for serious fall perfection. I know it's not a Halloween recipe, nor a pumpkin recipe, but dang a girl's gotta bake some neutral cake in the fall too! 😉 I think this is my all-time favorite chai recipe that I've made!

I have to confess that I have definitely struggled trying to get enough chai flavor in my baked goods before. I mean, I have these Chai Pear Cinnamon Rolls, and Chai Hot Cross Buns, and my thought process was that if I steeped the milk required for these recipes with a whole bunch of chai tea bags, the flavor would shine through. WRONG. So wrong. I tried and tried and the flavor was just so... lackluster. And definitely not prominent. I bit the bullet this time and literally just dumped the contents of chai tea bags into the cake batter, and what do you know... it worked! FINALLY! These little chai tea latte bundt cakes are packed with chai flavor that shines through and complements the vanilla glaze perfectly. SO YUM.

I'm going with my infamous vegan best friend, so I am anticipating she'll know all sorts of sneaky vegan places and goodies to introduce me to. We'll also be going to Disney which is always fun. Watch out for an easy Halloween costume tutorial soon!

I hope you'll try your hand at making these chai tea latte bundt cakes this fall season! And if you don't have a little bundt pan - no biggie. The recipe also makes 12 cupcakes, or 6 jumbo cupcakes. You can also double the recipe and make a big bundt cake! You have lots of options, the important part is that you make this recipe. You'll fall in love!

    Course: Cakes
    Servings: 6
Author: Valentina | The Baking Fairy

    Ingredients

    • 1 cup granulated sugar
    • 1¾ cup all-purpose flour
    • 1½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ¼ cup {½ stick} unsalted butter softened
    • 2 eggs
    • ⅓ cup sour cream
    • ¼ cup vegetable oil
    • 1 tablespoon vanilla extract
    • ⅔ cup whole milk
    • 3 tea bags finely ground chai tea
    • *for the glaze*
    • 2 cups powdered sugar
    • ¼ cup heavy cream
    • 1 teaspoon vanilla extract

    Instructions

    • Preheat the oven to 350F, and spray a 6-cavity mini bundt pan very well with baking spray. You can also use a 12-cavity cupcake pan. Set aside.
    • In the bowl of a stand mixer, combine the flour, baking powder, baking soda, salt, sugar, and chai tea. Add in the butter, and beat on low until it's incorporated and has a sandy texture.
    • In a small bowl, whisk together the oil, eggs, sour cream, and vanilla, and add them to the dry ingredients. Mix until combined.
    • Finally, pour in the milk, and beat on medium-low until smooth and creamy.
    • Divide the batter evenly between the cakes, and bake until golden brown and a toothpick inserted in the center comes out with just a few crumbs, 20-25 min. Set aside to cool completely.
    • To make the glaze, pour the powdered sugar in a medium bowl. Add in the vanilla, then add in the heavy cream, a little at a time, until a thick glaze forms. You may not need all the cream.
    • Pour the glaze on top of the cooled chai tea latte bundt cakes, and enjoy!

How long are these good for? If I made them the day before a birthday party would they still taste good when served?
      Please let me know. 🙂

Hi Ivey, thank you for your comment! Yes, I think making one day in advance would be totally fine. Just store in an airtight container if possible to keep them soft and moist 🙂
