vegan chunky monkey protein ice cream | The Baking Fairy

Helloooo, my loves! I am beyond excited to be pairing up with Sunwarrior Protein once again to bring you this delicious recipe! After protein waffles and a raspberry mango protein smoothie, I present to you... ice cream! It's creamy, dreamy, amazing, and totally healthy. Yep, you heard right... healthy. This ice cream is actually completely vegan, free of added sugars {unless you count the chocolate chunks}, and full of protein! All you need is 5 ingredients, and your life will be totally changed. So what are you waiting for? Let's get to work!

I'm sure many of you, especially vegans and dieters, have heard of nice cream. What it is, simply put, is frozen bananas blended on high speed until they turn into a light, fluffy, delectable treat that has the same consistency of soft serve! It's basically witchcraft. Bananas can do anything, y'all. I decided to take a banana nice cream base, add Sunwarrior's brand new Vanilla PLUS Protein powder and a little bit of almond milk, and then stir in chocolate chunks and walnuts to amp up the indulgent factor. The result is an amazingly rich, sweet dessert that tastes like it's totally bad for you while being completely guilt-free!

The inspiration for this recipe actually came to me from my childhood memories! Well, more or less. Back in middle school, any time my best friend and I had a sleepover, her mom would stock the freezer with dinosaur-shaped chicken nuggets, and Ben & Jerry's Chunky Monkey ice cream, which is just banana flavored ice cream with big chocolate chunks and walnuts! I figured since the nice cream is already banana flavored, all I would have to do is stir in the chocolate and nuts myself, and I would have a perfectly healthy, vegan-friendly copycat version.

Last time I worked with Sunwarrior, I got to sample their Classic Protein Powder, along with their Warrior Blend Protein Powder. While both of those varieties were good, I have to say this Classic PLUS is definitely my favorite one! The vanilla flavor is smooth and creamy, and doesn't have any of that chalky, powdery after-taste like many protein powders do. All of Sunwarrior's blends are organic, plant-based, and raw, which means they're amazing for your body and perfect for anyone on a vegetarian or vegan diet {or not!}. This particular blend combines the power of the classic rice protein with peas, chia seeds, quinoa, and amaranth to deliver a serious protein punch!

And now... let's get to everyone's favorite part. Time for a GIVEAWAY! Who doesn't love free stuff? Sunwarrior has graciously offered to send one lucky reader a Sunwarrior brand blender bottle with a bunch of product samples! This way, you can try their whole line committment-free, and buy whatever blend you liked best. I really don't see any downside to this. 🙂 Simply enter as many times as you'd like below, and good luck! Giveaway will close at MIDNIGHT on Tuesday, July 29th.  P.S. this is for readers in the U.S. only. Sorry, friends!

    Recipe type: Ice cream
    Serves: 1 pint
    Ingredients
    • 6-7 bananas, sliced and frozen
    • 3 scoops Sunwarrior Classic PLUS Vanilla Protein Powder
    • ¼ cup unsweetened almond milk
    • 1 cup chocolate chunks
    • 1 cup walnuts
    Instructions
    1. In a high speed blender, blend the frozen banana slices until they form a thick cream, similar to ice cream.
    2. Add in the protein powder and blend, then add in the almond milk, a little at a time, until the bananas return to a smooth and creamy consistency. You might not need all the milk!
    3. Stir in the chocolate chunks and walnuts. Serve immediately, or spread in a 9x5 loaf pan, and store in the freezer for later. Enjoy!
