    grilled peach & amaretto ice cream

    Transform the quintessential summer dessert of grilled peaches topped with ice cream into a Grilled Peach & Amaretto Ice Cream, all in one! Sweet charred peaches and amaretto cookies are folded into a creamy ice cream base for the perfect end to any summertime meal. 

    Happy Tuesday, friends! Sorry I've been a little quiet on social media the past few days, but I am finally on vacation! After FOURTEEN long, difficult, trying months... I am done with the didactic portion of my PA education! Boo-yah! I've spent all weekend driving up to Virginia Beach {you can still catch some highlights on my Instagram story!}, and now we can celebrate with some ice cream! More specifically, Grilled Peach & Amaretto Ice Cream... and did I mention it's no churn and no ice cream machine needed?! Hello, perfection!

    So, this combo was inspired by the ever-popular summertime dessert of grilled peaches topped with ice cream! I just figured... why not put the grilled peaches INSIDE the ice cream? My mom was telling me that adding crushed amaretto cookies to grilled peaches and ice cream is a classic Italian combo, so the addition seemed perfect! This dessert starts with a creamy vanilla and almond ice cream base, to which I added pieces of freshly grilled peaches and crushed chunks of amaretto. The peaches get soft and juicy when cooked, and the grilling adds just the tiniest hint of smoky, charred goodness that tastes like summer!

    No-churn ice cream recipes are honestly the best thing that's ever happened to me. My family is not super into ice cream, so I knew investing in a specialized machine would basically be a waste of my money. BUT. Enter no-churn recipes, where all you need is a hand mixer or stand mixer! You just whip heavy cream, drizzle in sweetened condensed milk, and then add anything your heart desires. I've done Peanut Butter Oreo Pie ice cream, Birthday Party ice cream (with cake batter and brownies!), and I did a Bluebell-copycat Moo-llennium Crunch for when it was off the shelves. And now - we're adding fruit! But seriously, the sky is the limit and you can make any sort of crazy ice cream you want!

    Serves: one 9x5 loaf
    Ingredients
    • 2 peaches, peeled and sliced
    • 1 teaspoon vegetable oil {optional}
    • 2-3 tablespoon sugar
    • 1-2 teaspoon cinnamon
    • 1 pint heavy whipping cream
    • 1 14oz can sweetened condensed milk
    • 1 teaspoon almond extract
    • 2 teaspoon vanilla extract
    • 1 cup amaretto cookies
    Instructions
    1. First, grill the peaches. You can do this on an outdoor grill or use a grilling pan indoors. I advise brushing the grill or pan lightly with the vegetable oil {or other neutral-tasting oil} to be sure that the peaches won't stick!
    2. Heat pan/grill to medium heat, and grill the peach slices about 3-4 minutes on each side, until softened and with evident grill marks. Set aside on a plate, and sprinkle with the cinnamon and sugar. Set aside to cool, then cut into tiny pieces.
    3. In a large bowl, beat the heavy whipping cream to stiff peaks with a hand mixer. When cream is whipped, slowly drizzle in the condensed milk until completely incorporated. Beat in the vanilla and almond extracts.
    4. Grab a 9x5 loaf pan to make your ice cream in! Pour in about ⅓ of the whipped cream mixture, then sprinkle on ⅓ of the peach pieces and ⅓ of the amaretto cookies, crushing them lightly in your hands first. Repeat for two more layers.
    5. Wrap the pan tightly with plastic wrap, and freeze until solid, at least 6 hours. Enjoy!
