    Hello, friends! Guess who's back to the mainland after a fab {and cold!} week in Paris. I normally don't post on Sundays, but I'm trying to get back to my normal posting schedule post-vacation and post-jetlag, soooo here we are. I have a whole series of amazing side dishes lined up for y'all this fall, all perfect for Thanksgiving and holiday entertaining, but also just to change up your weeknight dinner game. Today, we are starting with these Stovetop Rainbow Carrots with Caramelized Onions. OMG, so good. My mom has been making a version of these for as long as I can remember, and it is probably my favorite way to eat carrots! Let's go make em!

    The ingredient lineup for these rainbow carrots is seriously simple - carrots {any type, but I do love the multicolor variety just cause they're so pretty!}, onion, a little olive oil, salt, pepper, and a pinch of sugar. And, that's all! I left my carrots whole just for aesthetic purposes, but this recipe is even faster and easier if you cut your carrots into rounds.

    So, I have to share a pet peeve about carrot side dishes. Why does everyone insist on making them sweet! Seriously, search anywhere on the Internet and you'll see carrots with maple, brown sugar, honey, etc etc etc. I wasn't aware that I was trying to eat dessert as a side dish, but okay ? I do admit to including a wee pinch of sugar in my rainbow carrot recipe, but that is purely to help the onions caramelize and not so much to make the carrots extra sweet. This is definitely a savory recipe, and a super simple one at that!

    Bottom line, you should definitely add these delicious rainbow carrots to your side dish rotation! Super simple, made on the stove with minimal babysitting, and seriously so yummy. You'll love them!

    stovetop rainbow carrots with caramelized onions

    Ingredients

    • 2 lbs carrots
    • ½ white onion chopped small {about ⅓ cup}
    • 2-3 tablespoon olive oil
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • ½ teaspoon sugar
    • 2-3 tablespoon water as needed

    Instructions

    • First, wash and peel the carrots, and trim off the tops and bottoms.
    • Set a large nonstick pot on the stove over medium heat, and add in the olive oil and chopped onion. Add in the sugar, and cook, stirring occasionally, until onion is soft, translucent, and lightly golden.
    • Add in the carrots, season with salt and pepper, and cook, stirring occasionally, until they start to caramelize.
    • Lower heat to medium-low, add in the water, and cover. Cook the carrots, stirring occasionally, for 30 minutes, until soft and easily pierced with a fork.
    • Serve immediately!

      Brilliant, didn't know a carrot only dish can be this colourful. This would go well as part of a festive meal.

        Thanks, Leo! The recipe works just as well with normal carrots but I just love the fun twist of rainbow ones. They would be a great part of a holiday meal for sure!
