    Happy, happy Monday! As y'all may remember from the Instagram stories polls I did, you guys had a huge demand for real food recipes {as opposed to frilly sugary cakes} so... here we are! Today, I am sharing my latest obsession. I have legit been eating this for breakfast every single day for over a month, just because it's so simple and delicious. This is Chocolate Peanut Butter Chia Pudding, and you'll be amazed at how quick and easy it is to prep. It's a relatively healthy breakfast - but it tastes like dessert! Yes please.

    Seriously though, I have been on a huuuuge chia pudding kick ever since I started cutting meat out of my diet. I've always eaten a fair amount of fish so I have not really ever worried about my Omega-3 intake. But now... it's time to look into other sources. You can take a supplement of course, but it's always better to fulfill your vitamin needs through whole foods! Did you know a single tablespoon of chia seeds contains 150% of your daily needs of Omega-3?! Technically, they have a better Omega-3 per gram ratio than salmon, which is the poster child for omegas. That's amazing! And again - this tastes much better than salmon, especially if you're not a fan of fish.

    Okay, so what does this chocolate peanut butter chia pudding actually taste like?! Well, just like thick, creamy, satisfying PUDDING! It does have a slight crunch from the seeds, and while I personally don't mind it, I know some people prefer to run it through the blender so that it's totally smooth. This takes me like... 4 minutes of prep each night, and I'm rewarded with this fabulousness the next morning. I usually prep 2 days at a time but you can do whatever is easiest for you! If you want to make it for the same day, just mix all the ingredients and let it sit for 10-15 minutes until it thickens.

    And... that's really all there is to it! Just mix, wait, and then EAT! I hope you'll make this delicious chocolate peanut butter chia pudding soon for breakfast {or snack time}. I have a few different variations I've been enjoying, so I'm sure this isn't the last time you'll see chia pudding here!

    Ingredients
    • 2 tablespoon chia seeds
    • ½ cup milk {I like soy!}
    • 1 tablespoon cocoa powder
    • 1 tablespoon peanut butter
    • 1 packet stevia {you can also sub 1-2 tablespoon honey or agave to taste}
    Instructions
    1. In a small bowl, whisk together the milk with the cocoa, peanut butter, and stevia. Be sure to use a whisk as the peanut butter can be tricky to mix in!
    2. Add in the chia and mix well. Chia pudding will thicken in about 15 minutes for enjoying right away, or cover and refrigerate overnight. Enjoy!
