    Hello friends and happy Thursday! I am so excited to be collaborating with MorningStar Farms® again today to bring you this delicious recipe! I made you these Vegetarian Bacon, Sausage & Egg Patties which are perfect either with a side of potatoes or inside a sandwich for a healthier quick breakfast, and I'm obsessed! They are so easy to make and they are even freezer-friendly! If you're all about that meatless Monday {or meatless 2018} life, then you'll love these.

    So I know what you must be thinking... how on Earth are these egg patties vegetarian if they have sausage and bacon in them? Well, I have a little secret. I used MorningStar Farms® Original Sausage Patties and MorningStar Farms® Bacon Strips in my recipe, which are totally meatless! Y'all, these are seriously so delicious, you have to taste it to believe it! If you're an omnivore who's trying to incorporate more veggie options, or a vegetarian who's wanting to add some savory ideas to their repertoire, MorningStar Farms is the solution for you. I made these Cheesy Vegan Pulled Pork Nachos with them a few months ago, and I couldn't wait to get back in the kitchen and create more with their products! I just ran to Walmart to grab the vegetarian bacon and sausage, some eggs, milk, and that's it! I also threw a package of English muffins in my cart to make breakfast sandwiches.     As y'all know, I'm always so super busy on rotations that it's hard to find time for a good meal! Breakfast is the meal that usually suffers, and I've had way too many protein shakes to ever want to look at another. A hot breakfast is generally too time-consuming for a busy weekday, but not anymore! These savory egg patties are made in the oven, which means you can make a bunch at once and eat all week. And if you get sick of eating them too many days in a row, just freeze some for later and heat them back up in the microwave when needed. They are seriously so easy! Incorporating the MorningStar Farms veggie sausage, packed with plant protein, means I'm guaranteed to start my day off right with tons of energy.

    So I'm sure you're wondering - why not just eat meat? I talked about the pros/cons of vegetarianism pretty extensively in an interview with my friend who's a registered dietitian, but if you're looking for fast facts...

      • By selecting a veggie diet, you are likely to decrease your intake of saturated fats and cholesterol, which are large dietary contributions to heart disease risk.
      • According to the American Dietetic Association, "appropriately planned vegetarian diets, including total vegetarian or vegan diets, are healthful, nutritionally adequate, and may provide health benefits in the prevention and treatment of certain diseases."
      • Vegetarian diets—naturally low in saturated fat, high in fiber, and replete with cancer-protective phytochemicals—help to prevent cancer. Large studies in England and Germany have shown that vegetarians are about 40 percent less likely to develop cancer compared to meat-eaters.

    If you're interested in vegetarianism, just a little bit of research will show you that there are so many benefits! Even cutting out meat ONE day a week {a'la meatless monday} can have a positive impact on your health. A meat-free breakfast is the perfect way to start!

    Serves: 6
    Ingredients
    • 3 MorningStar Farms original sausage patties
    • 6 MorningStar Farms bacon strips
    • 1-2 teaspoon olive oil
    • 6 eggs
    • ⅓ cup milk (dairy or nondairy are both fine!)
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    Instructions
    1. Preheat oven to 350F. Spray a jumbo muffin tin with nonstick spray, and set aside.
    2. First, cook the MorningStar Farms sausage patties and bacon. Heat a medium nonstick pan over medium-high heat, add the olive oil, and cook until sausage and bacon are warmed through.
    3. In a large bowl, whisk together the eggs, milk, and spices. Divide the egg mixture evenly among the 6 jumbo muffin cavities.
    4. To make 3 sausage and 3 bacon egg patties, crumble 1 sausage patty in each of 3 muffin cavities, then crumble 2 bacon strips in each of the remaining 3 cavities.
    5. Bake in preheated oven for 15-18 minutes, until golden brown on top and no longer jiggly.
    6. Serve immediately by themselves or inside a sandwich, or refrigerate leftovers. To freeze, let egg patties cool to room temperature, then wrap tightly in plastic wrap, place in freezer zip-top bag, and microwave when needed.
    7. *NOTE: if you don't have a jumbo muffin pan, you can make these in a normal muffin pan but cook time may vary as they will be thicker*
