    Hello friends and happy Monday! Another week is upon us, but worry not - I have something extra-sweet to take away that Monday morning sting today. I am sharing this fabulous S'mores Chocolate Chip Skillet Cookie, which is essentially a big chewy choco chip cookie covered in gooey MARSHMALLOWS. YAS.     Ask any baker and we'll tell you - we love our KitchenAids somethin FIERCE. What other appliance can I trust to make perfect cookie dough, cake batter, buttercream, meringues the size of my face, and bread/pizza dough?! Nothing, I tell ya. I keep it pretty basic, but I did buy an ice cream bowl recently {on clearance for like $20!!!} and I am super excited to play with that this summer! And I'm sure you guys know you can buy a KitchenAid attachment for basically anything, from making spiralized veggies to grinding your own meat to rolling out pasta. It's basically magic, okay. Which is why a bunch of foodies could think of nothing better to gift our loyal readers than the original must-have appliance!     For now, back to the treats. This s'mores chocolate chip skillet cookie is truly the best of both worlds! You have a base of {cinnamon} graham crackers, topped with dense and chewy chocolate chunk cookie dough, crowned with a layer of perfectly toasted marshmallows. The key here is eating this while it's still warm from the oven! There is nothing better than that ooey gooey melted marshmallow pull!

    Ingredients
    • *for the cookie dough*
    • 1 heaping cup all-purpose flour
    • ¼ teaspoon baking soda
    • ¼ teaspoon salt
    • ¾ stick (6 tbsp) unsalted butter, melted
    • ½ cup packed brown sugar
    • ¼ cup white sugar
    • ½ teaspoon vanilla extract
    • 1 egg
    • 1 cup chocolate chunks
    • about 30 marshmallows
    • 4-5 cinnamon graham crackers
    Instructions
    1. Preheat oven to 350F, and spray a 8in cast iron skillet with nonstick spray.
    2. Break the graham crackers into large pieces, and arrange into a single layer on the bottom.
    3. Now, make the cookie dough. In the bowl of a stand mixer fitted with the paddle attachment, beat together the white sugar, brown sugar, and melted butter until creamy and combined.
    4. Add in the egg, followed by the vanilla and salt.
    5. Mix in the flour and baking soda until a dough forms. Finally, stir in the chocolate chunks.
    6. Dump the cookie dough into the prepared skillet, and press down into a single layer.
    7. Place skillet in oven and bake for 35-40 min, until cookie is soft but top appears dry.
    8. Remove cookie from oven, arrange the marshmallows on top in a single layer, and return to oven for about 5 minutes, until golden brown and gooey. Serve warm!
