    The weather has been insanely cold all over the US lately {unless you're in Florida, in which case... ahem. We're not speaking}, and I've been basically surviving off of soup and more soup and hot chocolate for the past week. I experimented with a black bean cake/brownie thing a few days and it was a semi-fail because I made it in a pan that was way too big, so it came out very thin and almost brittle-like. The flavor was really good, but the texture definitely needed to be worked on. I've noticed a bit of a skillet cookie trend going around the blogosphere lately, and I decided to combine the two and make a vegan, gluten-free black brownie in my cast iron skillet! This is seriously PHENOMENAL. It has a blender batter {which is really my favorite thing ever}, and it's incredibly delicious, rich, and fudgy. Yum, yum, and yum. Topped with some almond milk ice cream, this is nothing short of amazing. Think of it like the healthier, vegan version of the famous Pizzookie. You're welcome.

    Happy two-days-until-Valentine's, my loves! And before you ask, although my name is indeed Valentina, Valentine's Day is NOT my birthday.     Hello friends! 2012 is rushing to an end, I can't believe it's so close! This year seems to have whizzed by. Lots of stuff has happened this year, from my blog totally blowing up, to getting over 100 posts, to meeting so many wonderful people thanks to this, and planning fun parties... to non-baking stuff. Like getting accepted into my dream university! Hellll yeah! 🙂 I had to share that little tidbit because I will be leaving to go to college soon... so who knows how much I will be able to bake there! But we will see. Keep your fingers crossed. 🙂 So first... let's look at the most popular recipes of 2012!

    Both my pumpkin brownies and diet coke brownies got a ridiculous amount of views! Like, I could not even believe it. Other popular posts: flourless chocolate crackle cookies, chocolate chip marble fudge cookies, sweet potato donuts, peanut butter banana chocolate chip cookies, dark chocolate confetti layer cake, gluten-free zucchini almond cake, and sweet potato honey brownies!

    And now, for today's recipe... Magic Cookie Bars. Yeah, yeah, I know everyone has been making these forever, but I never had! And I had never even tasted one before. But now I can see what the hype has been all about! They are buttery and chocolatey and gooey and so, so addicting. Ugh. So yummy! I did not have graham cracker crumbs, but I did have some sad, abandoned sugar cookies that were rock hard. I pulverized them in my food processor, and they were the perfect crust! Mmm. This is probably the last recipe I post in 2012, but it sure was a good one! 🙂 Happy new year to all my sweet followers and fans, and thank you for a fabulous year. Here's to many more!

    Serves: one 9x13 pan
    Ingredients
    • 2 cups sugar cookie crumbs
    • ½ cup (1 stick) melted butter
    • 1 14oz. can fat-free sweetened condensed milk
    • 1 cup unsweetened shredded coconut
    • ⅓ cup Heath toffee bits
    • 1 cup dark chocolate chips
    • handful of almonds, roughly chopped
    Instructions
    1. Preheat the oven to 350F.
    2. Line a 9x13 baking dish with parchment paper, and set aside.
    3. In a medium bowl, combine the sugar cookie crumbs and melted butter, mixing until evenly moistened. Press the mixture into your prepared baking dish.
    4. Top with the whole can of condensed milk, followed by the coconut, toffee bits, chocolate chips, and almonds.
    5. Bake for 25-30 minutes, until chocolate chips are melted and the edges of the bars are toasty brown.
    6. Let cool, then cut and serve!

    Okay, I MUST have been the only person who didn't know about this. Seriously. Why did nobody ever tell me I could mix a can of Diet Coke and a box of brownie mix and have it come out super moist and delicious and have it even be kinda healthy? I feel like I've been fooled all these years. But now, thanks to Pinterest, I know the truth! I feel these could be made with Diet Cream Soda and come out really well, or even Dr. Pepper! I would not advise lemony sodas though, because that sounds gross.... but that's just me!

    I'm gonna be honest, I wasn't sure this was gonna work at first. I had seen recipes for cake mix with soda, but brownies? It sounded too weird. But then I saw that pin on Pinterest that led back to the original blog with pictures and everything, and I was like, "Well, if there's pictures, it must be true." I am so glad I went ahead and did this! These brownies are so soft and fudgy, even the edges. I think what made these extra yummy was that my brownie mix had chocolate chips in it. If yours doesn't, I definitely advise adding some! The parts of the brownie without chocolate chips DID taste faintly like Coke, so the gooey chips helped cover that up. 😉

    • 1 can diet soda (I used Coke, but like I said, anything carbonated should be fine!)
    • 1 box brownie mix
    • chocolate chips (optional, but recommended!)
    Instructions
    1. Preheat oven to 350F, and line a 9x13 pan with parchment paper.
    2. Empty the contents of the brownie mix in a mixing bowl, then pour in the whole can of soda. It will fizz and bubble alot, but it's okay! Stir well until there are no more lumps. The batter will be REALLY, really liquid, but don't panic! It's supposed to be like that.
    3. Pour batter into prepared pan, and bake for about 25-30 minutes.
    4. Check on them when you start to smell them, you definitely don't want these to burn! They will not form a crispy "skin" like regular brownies because of the carbonation, so they will look a little funny. They taste delicious though!

    Way back in March, when I turned 18, I told my friends, "Get me cookbooks!" And... cookbooks I got! 🙂 The one I've used the most so far is the Good Housekeeping Best-Loved Desserts, but I think the most unique and beautifully photographed one is definitely Baked Explorations. The photos are gorgeous and mouthwatering, and the recipes are all over the map. From Salt & Pepper Sandwich Cookies (which are the cover picture), to Tomato Soup Cupcakes with Mascarpone Frosting, to Nutella Scones (which you better believe I will make and post about soon!), all of their treats are fun and innovative spins on old favorites. Anyways, enough ranting, but I adore this cookbook! 🙂

    These oatmeal turtle bars are so freaking delicious. They may not look like they have that much potential, but they are most definitely a diamond in the rough! The buttery oatmeal crust is almost like a shortbread with added crunch, and a layer of pecans, mixed chocolate chips, and homemade caramel make this perfection! A sprinkling of extra oatmeal topping on top seals the deal. These will blow your mind! And, they're so easy-peasy, you can't NOT make them.

    I had a little problem though... I followed the directions exactly when I made the caramel, and I'm not sure if it called for too much butter or what, but my caramel was covered by a layer of butter "suds" the whole time it was cooking, which made seeing the color underneath really tricky! It tasted fine, but it was pretty liquid, and you can barely taste it in the bars. But, it melted the chocolate beautifully and I think it helped keep the chocolate layer from getting rock-hard in the fridge. Enough talking, here is how you make these delicious babies!

    Ingredients
    • *For the bars*
    • 1½ cups all-purpose unbleached flour
    • ¼ teaspoon salt
    • ¾ teaspoon baking soda
    • 1 cup firmly packed brown sugar
    • 1¾ cups rolled oats
    • ¾ cup (1½ sticks) unsalted butter, melted
    • ½ cup pecans, chopped into large pieces
    • 1½ cups chocolate chips (I used a mix of milk, dark, and semisweet)
    • *For the caramel filling:*
    • ½ cup firmly packed light brown sugar
    • 10 tablespoon (1¼ sticks) unsalted butter, cut into chunks
    • 2 tablespoon heavy cream
    Instructions
    1. Preheat the oven to 350F. Grab a 13x9 glass or light-colored metal pan, and spray it with nonstick spray, then line with parchment paper, and spray or butter the parchment.
    2. In a medium bowl, whisk together the flour, salt, and baking soda. Add the brown sugar, and use your hands to rub it in. This is especially important if there's lumps in your brown sugar! Add in the oats, and stir until evenly combined.
    3. Make a well in the center of the dry ingredients, and pour in the melted butter. Stir until the entire mixture is evenly moistened and combined.
    4. Spread about two-thirds of the oatmeal mixture across the bottom of the prepared pan, pressing slightly, and bake for about 10 minutes. When done, remove the pan from the oven to cool, but leave the oven on. Sprinkle the pecans and chocolate chips on the warm crust.
    5. Next, prepare the caramel. In a medium saucepan over medium-high heat, melt the sugar and butter (for the caramel) together.
    6. Bring the mixture to a boil and boil for 1 minute, stirring constantly (the caramel will darken quickly).
    7. Remove the pan from the heat, stir in the heavy cream, and pour on top of the chocolate chips and pecans. Use a rubber spatula to evenly distribute the caramel. Sprinkle on top the remaining oatmeal mixture, and bake in the oven for 10-12 more minutes.
    8. Let the bars cool in the pan for 15-30 minutes, then place the pan in the refrigerator and chill for 1 hour before cutting. Store at room temperature or in the refrigerator, tightly wrapped in plastic wrap.

    Don't you just love when you make really good recipes and you can't wait to share them with your fabulous followers (not to mention the rest of the Internet), and you take pictures and everything and then... you literally can't find the time to sit your butt in front of your computer and edit the pictures and write the post? Because you're so busy working 10 hours a day, and at the same time trying to make time every day to work out? You do? Cause personally, I hate it. It sucks. I feel like I'm depriving my followers and friends of deliciously easy recipes that would make their belly happy, and pictures that will make them drool. But, enough about me! Let's get down to business.

    Two words: s'mores. brownies. Ohhh, my goodness. Do you see how fudgy these are? It is absolutely out of this world. I really don't know what my favorite part was about them... the extra rich chocolate flavor that cures a craving with just a tiny square? The marshmallows that melt away and leave behind their sweet flavor and chewy fudgyness? The fact that it took me just 10 minutes to prep and stick them in the oven? Or, the fact that this is magic made with storebought cheats? Tough choice. But, the easiest choice is yours! To make these, or not to make these? It's fairly obvious to me what your answer should be... make them! You.will.fall.in.love. Yum.

    Serves: one 8x8 pan
    Ingredients
    • 1 family-size (13x9) box mix of fudgy brownies, plus eggs, oil, etc. called for in instructions
    • graham crackers
    • semisweet chocolate chips
    • stacker marshmallows (or just plain mini marshmallows)
    Instructions
    1. Preheat oven to 325F. Grab an 8x8 baking dish and line with parchment paper, and set aside for now.
    2. In a medium bowl, prepare brownie mix as directed.
    3. Get your prepared baking dish, and pour in about ⅓ of the brownie batter, using a spatula to make sure the whole bottom of the dish is evenly covered.
    4. Make one even layer on top of the batter with the graham crackers, followed by a layer of marshmallows, and a scant layer of chocolate chips.
    5. Top with remaining brownie batter.
    6. Bake for about 45 minutes, until toothpick comes out sorta clean... the chocolate chips and marshmallows will make it hard to tell, but don't overbake!
    7. Let the brownie rest for about 10 minutes before removing from the pan, and wait at least one hour before cutting! Enjoy!
