    Hiii friends and happy Monday! Can you believe yesterday was National Ice Cream Day and I missed it with this post? By ONE day?! WAH. But who cares, ice cream is good any time and if you don't think it's an issue then neither do I 😉 This Lemon Curd Raspberry Homemade Ice Cream is seriously amazing and tastes like summer! This was my first time making "real" ice cream with my ice cream machine and as much as I love no-churn recipes... this is the real deal. You can definitely taste the difference in that creamy base!

    So, I'll let y'all in on a little secret... my fiance' is actually not a dessert person. Gasp! The horror! I know, you guys. I know. But something he does love is ice cream. More specifically, Blue Bell's special Moo-llennium Crunch ice cream. If you live in Texas or anywhere in its vicinity, you probably heard of the "tragedy" (clearly I'm using the word lightly here) that happened like a year ago where the Blue Bell plant had to shut down due to contamination or something or other. Anyways, since reopening, they've been re-releasing flavors one by one... and of course the beloved Moo-llennium Crunch has not made its comeback yet. So I decided that as someone who has a food blog and also knows how to make ice cream, it was my duty to make some at home. And y'all, it is aweeesomeeeeee.

    Today, my friends, I am here to blow your mind. No-churn ice cream has been pretty popular this year, and I actually made this Peanut Butter Pie version a few weeks ago with creamy peanut butter swirls and crushed Oreos {one word: YUM}. I had been brainstorming another flavor of homemade ice cream, and I thought about cake batter ice cream... I'm a fiend for anything confetti cake/birthday cake/cake batter flavored, so it seemed like an obvious choice. "BUT," I thought, "what about chocolate?!" So, this is the frankestein of an ice cream that I came up with. Cake batter ice cream with rich, chocolatey chunks of fudgy brownie and tons of sprinkles {obvi}. I call this, Birthday Party Ice Cream. You're welcome.
