vegan coconut lime trifles with tropical fruit salad | The Baking Fairy #FreakyFruitsFriday

Hi hi friends, and happy FRIDAY! I am so excited to be participating in a mini-series this month called #FreakyFruitsFriday! Myself and a few other food blogger friends paired up with Melissa's Produce to show off some, well, freaky fruits (and veggies) and fun ways to eat them. I don't know about y'all, but I am always so intrigued by the "tropical" fruit display at my local grocery store. Like, what ARE all these things?! ???? It was so much fun to receive a big box of mysterious produce and get to give everything a try. I have combined a few of my new favorites in these Vegan Coconut Lime Trifles with Tropical Fruit Salad!

chocolate espresso creme brulee | The Baking Fairy

Ah, creme brulee... we meet again. The last time I made this little french treat was probably the last time I blogged it, aka approximately 4 years ago. Funny how time flies when you're a blogger! I could have sworn it hadn't been so long, but my trusty blog proved me wrong. I was just brainstorming my latest treat for Lavazza Coffee, and it dawned on me that while creme brulee is traditionally vanilla, there was really nothing stopping me from turning any flavor of custard into creme brulee. Today's show-stopper is a thick, delicious dark chocolate and espresso custard covered in crunchy, caramelized sugar. Yum!

    mocha tiramisu with Lavazza Coffee

    Mar 25, 2015 · 16 Comments

mocha tiramisu with Lavazza Coffee | The Baking Fairy You guys! I am seriously beyond thrilled to announce that I am the latest brand ambassador for Lavazza Coffee! Lavazza is Italy's most popular coffee brand, so being chosen as a representative is a huge honor! As y'all know, I'm full-blooded Italian {and I'm also a college student}, so coffee for me is basically its own food group. To kick things off, I whipped up this incredibly delicious Mocha Tiramisu. I based it off of my mom's fantastic recipe, but decided to make things a little richer by swapping the regular vanilla cream with a chocolate mascarpone concoction. I'm a firm believer that if a little chocolate is good, a lot of chocolate is great! This dessert combines espresso-soaked ladyfingers, freshly whipped cream, and cocoa-mascarpone cream to create a treat that's rich and satisfying while still being incredibly light. ...

    apple pie bread pudding

    Mar 20, 2015 · 5 Comments

apple pie bread pudding | The Baking Fairy

You might have noticed by now that I have a thing with making food inspired by apple pie that isn't actually apple pie. Like apple pie waffles, apple pie rugelach, and crustless apple pie {aka really, really good applesauce}. And now, I've made you Apple Pie Bread Pudding. Truth be told, I don't think I've ever even made actual apple pie, but I just love making things with caramelized apples and cinnamon and pecans and all of that pie-inspired goodness. This bread pudding is incredibly rich and delicious, and it combines a soft, creamy bread pudding base with chunks of buttery apples, toasted pecans, and a healthy sprinkle of apple pie spice. Topped with whipped cream, this is nothing short of cozy perfection. Don't remind me that we're halfway to April, the weather is crap and I demand cozy food NOW.

3-ingredient paleo banana custard | The Baking Fairy

Hello, friends! I have got the most ridiculously easy, delicious healthy treat to share with y'all today. I've been on the Whole30 meal plan for the past couple of weeks and one of the struggles I've had is that I'm kind of in a food rut when it comes to breakfast! Here is a crash course on Whole30 so that my whole post will make more sense: basically, no dairy, no grains/gluten, no sugar or sugar substitutes, and no legumes {I'm still scratching my head at the bean part, too}. But, taking all of that into account, it's easy to see how a girl could just go with scrambled eggs and veggies every single morning and get sick of it sooner or later! I found this delicious Paleo Oatmeal recipe and I stuck with that for a few days, but I can't live without variety! Enter, these little cups of deliciousness. 3-ingredient, minimal prep, and they taste like BANANA PUDDING! And did I mention they're only 145 calories? I know. Actual perfection.

    berry panna cotta

    Jul 25, 2014 · 10 Comments

berry panna cotta | The Baking Fairy

I am so excited to be sharing this recipe today! Panna Cotta is a mostly unknown recipe here in the States, but it's super popular in Italy! I wouldn't say I used to eat it ALL the time when I lived there, but I definitely have some fond memories of enjoying this dessert when I was little. It's hard to describe, but the most accurate explanation I can give is that it's a cross between pudding and jell-o. I hate saying that because it makes it sound so weird and gross, when in reality it's delicious! It's smooth and velvety, and while you can flavor it with just about anything, my favorite has always been the classic vanilla kind. The most delicious way to enjoy panna cotta, in my opinion, is topped with some creamy, indulgent dark chocolate sauce. Today, I whipped up a fresh summery version using fresh berries, but you can make the simple base recipe and personalize it any way you choose!
