    Happy Friday my beautiful friends! I don't know about where y'all live, but here in Texas it has been H-O-T hot!! Like, disgustingly so. I don't like to spend any time outside if I can help it cause it's just not enjoyable in the least. The small silver lining to this heat wave, however, is that we get to be creative with how we cool off and stay hydrated.     I made you nachos... vegetarian nachos! And I even made the chips myself. Sorta. These turned out to be some of my favorite nachos that I've ever had! I used HEB's Mixla Tortillas, which are made with a blend of flour and corn, cut them into triangles, and baked them. Because these were made with actual corn tortillas, versus store-bought extra-thin corn chips, they were sturdier and were able to hold up loads of toppings without getting soggy or breaking! And besides, I don't think there is anything better than warm, salty, fresh-out-the-oven tortilla chips. If you're the observant kind {and I'm sure you are}, you might have noticed I have some stuff that looks like meat in my nachos. But didn't I say these are vegetarian? Well, I have a secret....
