    I have to admit it... I'm actually not a HUGE fan of cookies. I know, I know. The tragedy! I thoroughly enjoy a good spoonful of chocolate chip cookie dough {especially in truffle form}, and cookies still warm from the oven are a definite weakness. But, once they cool off... meh. Not my favorite thing. But these cookies, I could not stop eating. I made molasses crinkles for the first time last Christmas, and I fell in love! This year, I decided to make them again and add a bit of white chocolate, because I'm a firm believer that everything can be improved with the addition of chocolate. The dough was phenomenal, but the baked product was even better than I imagined! These are rich and buttery, with a warmly spiced base and a handful of sweet white chocolate chips scattered throughout, and they achieve the perfect ratio of crisp edge to doughy center. Serious cookie perfection.

Last year, I made these darling Dark Chocolate Mint Chip Biscotti to embrace my Italian roots {and also I just really love Andes mints, what can I say}. This year, I decided to ship off these adorable shortbread cookies studded with mini chocolate chips and encrusted with rainbow sprinkles to embrace my obnoxious side. I think they came out pretty precious, no? These are so easy to make, and you can change up any kind and color of sprinkles on the edges to match whatever occasion you want! Or, if you're not into sprinkles {GASP}, you can leave them plain. I guess. Whatever. I won't force you to use sprinkles but just know that you're totally missing out!

    Hello, friends! Since it's now "officially" fall {not in Texas, it's not}, I thought it was acceptable to share some autumnal recipes! If you look through my archive, you'll see I actually have an embarrassing amount of pumpkin recipes on here, and a few sweet potato ones, too. Just search for "Pumpkin" in the side bar and you'll get a million results! Seeing as I have a ton of pumpkin-specific treats on here already, I though I'd kick off the 2014 season with a sweet potato dessert 🙂 I know a lot of people don't like them, but honestly when it comes to baked goods, they taste just like your beloved pumpkin.     Happy Tuesday! After a long week of exams and yet another weekend of studying, guess who's back on the radar? That's right, your favorite baking fairy!     Raise your hand if you are a cake-batter-a-holic. Or a confetti-cake-a-holic. Or a birthday-cake-a-holic. Me, personally? I'm all three! I love anything cake batter or confetti cake or birthday cake flavored. It can be ice cream or frozen yogurt or frosting or... whatever. I just love it all! So these cookies are basically my dream come true, because they taste exactly like cake batter. And they have sprinkles. And they have CHOCOLATE! Get. In. My. Belly.



    Please don't even get me started on how good this cookie dough is! It is totally eat-with-a-spoon-able, but of course I didn't do that. Cause I'm a mature adult.. and stuff. Yeah. Ha! I'll just keep telling myself that next time I pinch off little bits of cookie dough and eat them... which would be every time I make cookies. It's common knowledge that tiny bits of stolen cookie dough have no calories, right? What I really need to do is just go ahead and make egg-less cookie dough made specifically for snacking purposes. I promise I'll share when I do. 🙂


    Seriously though, these cookies are amazing! They are like a cross between confetti cake, and chocolate chip cookies, and sugar cookies, and cake batter, and cookie dough... if you could shove all the things I love together into one cohesive food, these would be it. Make them, and you will be so glad you did! P.S. If you really wanted to, you could omit the chocolate chips and just have yourself cake batter cookies... I won't judge. Those are pretty great, too. 🙂

    Recipe type: Cookies
    Serves: 4 dozen
    Ingredients
    • 1 box confetti cake mix (15.25 oz)
    • ⅓ cup all-purpose flour
    • 2 eggs
    • ½ cup vegetable oil
    • 1 teaspoon baking powder
    • ⅔ cup dark chocolate chips
    Instructions
    1. In a medium bowl, whisk together the cake mix, baking powder, and flour.
    2. Add in the eggs and oil, and mix until a dough forms, then stir in the chocolate chips. The mixture should be thick but soft!
    3. Refrigerate cookie dough for at least 30 minutes (I mean it!).
    4. Once ready, preheat the oven to 350F.
    5. Line two jelly-roll pans with silicone liners or parchment, and scoop tablespoonfuls of cookie dough onto them. Since they are little scoops, and the dough is cold, you should be able to fit 20 cookies per pan without worrying that they will spread and touch.
    6. Bake for 10-12 minutes, until slightly golden. Do not overbake, or you will ruin the delicious cookie-dough-y center! Let cool slightly, and enjoy!

    I have a confession to make... every time I've made whoopie pies, I've had a disaster. The first time I tried, they came out hard and thin like sugar cookies. The second time, they weren't bad, but they were huge. Like, GIANT! I had definitely underestimated how much they would spread. And the filling came out gross. I guess third time's the charm! I made these sweet little pumpkin whoopie pies with chocolate filling and they were perfect. I watched in the oven as they didn't spread out obscenely, and I was beyond happy when my filling was fluffy and delicious and not watery or lumpy. Ahhh, much better. Not to mention, they're so cute!

    Hi, it's October, and these are AMAZING. Oh my holy goodness. I have never baked with pumpkin before because I thought "I didn't like it." But I've been an idiot, because I've totally been missing out! Like I promised in my last post (or perhaps the one before?), this is a recipe that is seasonally appropriate and contains chocolate. So, everyone is happy! My younger brother tried one fresh out of the oven and I swear his eyes rolled back in his head. He told me, "Valentina, I think these may be the best cookies you've ever made. And the best cookies I've eaten... in my entire life!" Well, dang! But I do admit these were really super delicious. And this dough... don't even get me started. I could've eaten the whole bowl cause it was so good!

    My mom loves buying things at the store when they're on sale. Loves it. Which would explain why I have three 1-lb boxes of Rice Krispie cereal in my pantry. So, if you just think about how light Rice Krispies are... well, these boxes are giant. If you have a similar problem, I have a solution for you: make chocolate chip cookies with Rice Krispies! In this case, unlike Rice Krispie treats, the cereal is used as a mix-in, not as the main ingredient, so the result is a delicious, extra crispy and crunchy cookie. My mom even said  she likes them better than regular chocolate chip cookies! I thought they were pretty good myself. 🙂 Sadly, even the two heaping cups I used didn't even make a dent in our Rice Krispie stash. Sigh... Also, on a side note, how cute is this little cookie stand? MaryJo bought it for me for the Bake Sales, but oh my goodness... it's so adorable I couldn't resist. I love it! Thank you so much dear. 🙂

    This recipe comes courtesy of the lovely Mary Jo over at the Redhouse Ranch and HealthQuest blogs. I know neither of those blogs have anything to do with food, but in real life, this woman is an amazing cook and baker! Her stuff is always so good. 🙂 While trying to come up with recipes for our upcoming chocolate bake sale, she asked me to tweak her already-delicious Shut The Barn Door cookie recipe so that the dough would be cocoa. No problem! These cookies are easy, the only hard part is trying to not eat all the dough before cooking... not that I would know anything about that. 🙂 They remind me of Monster Cookies, or Kitchen Sink cookies, as they have a crazy variety of mix-ins which all magically work together to create a ridiculously good cookie. We've named these Chocolate Cowgirl Cookies! Now, these aren't really every-day cookies (unless you have a very well-stocked pantry), but they're totally worth the extra trip to the grocery store. Make these soon! Your thighs may disapprove, but your tastebuds won't. 😉

So, today, while I was not doing my research paper blog creeping, I found this recipe on this cute little blog I had never heard of before, called Sweet Make Me Smile. I haven't really looked through many of her recipes yet, but a particular cookie recipe caught my eye. Simply called "Healthy Cookies," they claimed to have no sugar, no flour, no eggs, and no butter. Say what?! How do they even stay together?!
