german chocolate cake bites | The Baking Fairy

Hello, dearest readers! We are at t-minus 2 DAYS to Valentine's Day, and the time to whip up something sweet and special for your beloved has come. Today, in collaboration with H-E-B, I'm sharing these absolutely adorable and deceivingly easy German Chocolate Cake Bites! The base for these little babies is actually traditional chocolate Texas Sheet Cake, cut out into cute little hearts, stuffed with homemade coconut-caramel filling, and topped with the sheet cake glaze and pecans. These look fancy, but don't be fooled! They start with a box mix and couldn't be simpler to whip up. Let's get to baking!

Oh, y'all, I can't wait to tell you the story behind this cake. Like, honestly, it's hilarious. I bumped this recipe straight to the top of my drafts so I could finish it first and get this out, because it's too funny to keep to myself. Well, at least it's funny now. At the time, not so much. I present to you, Upside Down Banana Chocolate Chip Cake. Aka, the most efficient way to fill your entire house with smoke and kind of almost burn your house down. No biggie, you know. Good thing this cake turned out really, really good or I would've been pretty pissed πŸ˜‰

berry & lemon curd meringue cake | The Baking Fairy

I consider January the most infamous of the diet months, with everyone full of hope and determination to fulfill the resolutions they just made. I, myself, am one of those people, but that doesn't mean I can't share dessert πŸ˜‰ Besides, I made this before I officially started my diet, so it doesn't count, right? This is a ridiculously delicious meringue cake that is filled with {homemade} lemon curd, freshly whipped cream, and heaps of juicy berries. As far as desserts go, you could definitely do worse! This probably doesn't fit in your diet, but well... almost.

chocolate pumpkin roll | The Baking Fairy

Hello, friends! Today we are back to our regularly scheduled program... hopefully no more wedding cakes for a little bit, yeah? I need to recover. πŸ˜‰ Instead, today I'm discussing the famous pumpkin roll! You know, the one who's recipe you can find on the wrapper of the pumpkin can. While the original is pretty great, we all know I can't leave well enough alone, so I decided to give it a chocolatey makeover. We've got white chocolate and mini chocolate chips in the filling, and of course an indulgent dark chocolate drizzle on top. Yum! Let me show you how it's done.

sweet potato layer cake with marshmallow buttercream | The Baking Fairy

Hello, friends! I am so excited to be sharing this gorgeous cake with you today. I have been wanting to make an unusual recipe with the sweet potato + marshmallow combo for ever, and I just love how this came out! I present to you... sweet potato layer cake with marshmallow buttercream! Oh, yes. I love pumpkin stuff just as much as the next person {maybe more, honestly}, but every fall season, I just can't get over the fact that sweet potatoes never get the love they deserve, especially when it comes to desserts. I made some sweet potato cookies last year, and now, cake! You're gonna love this.

mini banana split cheesecakes | The Baking Fairy

Hello, friends! I am so excited to be sharing another delicious recipe in collaboration with Smucker's today! I was given the assignment to come up with some recipes using their line of ice cream sundae toppings, but I decided to think outside the box, and come up with desserts that use these toppings while not actually involving ice cream. Oh yes. Let's get creative! My first recipe was these Ice Cream Sundae Cupcakes, and my latest creation is these mini cheesecakes inspired by a banana split. Time to go shopping at Kroger!

vegan cookies & creme cake | The Baking Fairy

First and foremost, happy {late} birthday to my infamous vegan best friend! Well, it's a late birthday now because her actual birthday was yesterday, but obviously we celebrated and I wished her a happy one on the correct day. Duh. What kind of best friend do you think I am? Emilie didn't have any requests or specifications when it came to her birthday cake, so I just kind of did whatever I wanted... which is how this dessert was born. This cake is basically a combination of all the things we love most... chocolate, Oreos, sprinkles, pink glitter, and things that are tiny. I present to you... Vegan Cookies & Creme Cake! But like... tiny, in 5 inch cake form. Ta-da!

vegan black forest cake | The Baking Fairy

Ooooh, you guys. You're gonna love what I have to share today. It's Black Forest Cake! And it's vegan! Yippee! This baby was actually for a recent birthday order, and when they asked for black forest I was like hmm... well, I know it has chocolate and it has cherries. And that's basically the extent of my knowledge on that subject. πŸ˜‰ But trust me when I say this is unbelievably delicious and easier than you'd think! I know I always say that but just cause it's always true. This cake is made of two layers of dark chocolate cake, sandwiched together with a vanilla buttercream mixed with fresh caramelized cherries, then covered in dark chocolate buttercream, and topped with a grating of chocolate and more fresh cherries on top. It's the absolute perfect way to celebrate summer's bounty!

sangria cake | The Baking Fairy

I am soooo excited to be sharing this cake with y'all today! I've had the idea for a Sangria Cake floating around my little blogger brain for the longest time, and I am beyond happy with how good {and how pretty} this cake came out. After I realized how great of an idea sangria cake would be, I went to Pinterest to see what other people had done. And found... nothing. Hmph. So then I looked for red wine cake, which yielded a million-and-one results, and all including chocolate! Wine and chocolate, yes. Sangria and chocolate, umm... no thank you. That sounds a little weird. So I had to get to work and whip this little pretty up based on vanilla cake. And I couldn't be happier! This cake is the bomb, y'all.

    molasses spiced bundt cake

molasses spiced bundt cake | The Baking Fairy

I'm not trying to freak y'all out, buuuut... just 15 more days til Christmas! Aaaaah! Who else hasn't even started shopping for presents yet? I honestly don't even know what to buy for most of the people on my list. So, instead of worrying about that, I made you cake. Obvious course of action, I'd say. The first time I ever made spice cake was a few weeks ago for a wedding, and when I tasted the batter, I fell in love. I'm not a huge cinnamon-spice person, and I'd usually choose chocolate over spice any day, but this is seriously amazing! I know that when people think of cake with spice and molasses, they probably expect a plain and boring thing. This is far from it! You start with a strong vanilla base, then add spicy cinnamon and ginger, cloves, and of course, the rich and slightly bitter molasses. This little unassuming dessert is actually hiding a ton of delicious flavor!

If you're wanting to make a decadent cake but are limited on ingredients, this Vegan Chocolate Bundt Cake is the treat for you! It uses simple pantry staples, and requires no eggs or dairy!

vegan chocolate bundt cake | The Baking Fairy

Happy Tuesday! The first day of school has officially been survived, so to celebrate, I made Vegan Chocolate Cake. With a deep, dark chocolate glaze. And SPRINKLES! Wheee! My poor little best friend had her wisdom teeth removed a few days ago, and she has just been so miserable and unable to eat any solid food. Yesterday she went, "All I want to eat is chocolate cake! Is that such a bad thing?" So I thought, well... I can work with that. This cake is both a reward for starting school AND a sweet treat to help my friend feel better. And as a bonus, it's vegan and absolutely, positively delicious.

patriotic cake roll | The Baking Fairy

Today { as it happens every single year... on every single holiday }, it dawned on me that I was only two days away from the 4th of July. So I figured I better bake something up! I was brainstorming forever, because it seemed like every single good or creative patriotic recipe hadΒ  already been made. Then... I remembered about this super cool tutorial I had saved on Pinterest for a Chevron Cake Roll. And I figured... If I can make a chevron cake, why not make it look like a flag? And here it is! I am so happy with how cute it came out, and you will never believe how easy it was. Seriously!

summer fruit clafoutis | The Baking Fairy

I am so excited to share this recipe with y'all today! I have been dying to make clafoutis, which is a traditional French cake made with fruit { usually cherries } and a light, pancakey batter, and then baked in the oven. I finally got around to it today, and couldn't have been more pleased! This sweet treat is super simple and fast to make, and is the perfect blank canvas for enjoying any of the fabulous seasonal fruit we have at the moment. I picked cherries, apricots, and peaches, but the options are endless! When fall and winter roll around, I will definitely make one of these with apples or pears. The batter tastes quite plain, so it can work with basically any fruit you could think of! While searching for clafoutis recipes, I even stumbled upon a few chocolate ones. Hmm... that will have to go in my "to-bake" list. πŸ™‚

toasted angel food cake | The Baking Fairy

I have a fun new treat for y'all today! Toasted angel food cake! Because, well, why not? I personally love angel food cake, just not... plain. Don't get me wrong, it tastes fine, but I always feel like something should be added. Berries? Chocolate? Whipped cream? The possibilities are endless. So why not give this fluffy angel food cake a texture makeover? I slathered it with MELT butter replacement, toasted it, and... it was the best thing ever! I feel like this dessert is perfect for both a casual setting and for more of a formal occasion. It looks gorgeous {especially with a side of mixed berries}, but it's also super easy and fast!

cranberry-orange bundt cake | The Baking Fairy

Happy black Friday! Who's still in a food coma from last night... and who's out on a wild shopping spree? I'm about to go out and get myself some deals {if there's anything left}, but I definitely wasn't one of those crazies lined up outside stores last night at midnight. πŸ˜‰ Instead, I was inside watching movies from the comfort of my bed! I was warm, AND I wasn't in any danger of getting trampled. And I didn't spend money. Score!

flourless chocolate cake roll | The Baking Fairy

Have you ever had flourless cake? Because if not, ohhh boy, you are missing out. Although it seems strange and sort of impossible to make cake without flour, it is anything but so. Flourless cake is light, fluffy, melt-in-your-mouth delicious. It somehow manage to be rich and decadent while having the consistency of clouds. Don't believe me? Make this cake πŸ˜‰ It may look impressive and fancy, but it's quite easy! A little time consuming, but nothing impossible.
